desserts is stressed spelled backwards

This is always a crazy time of year. The holidays, our busiest time at The Grapeseed Co. and a round of out-of-town guests on the calender from now until Christmas! My mom is visiting for a few weeks and we have been eating very well, which is helping me stay on top of things. She made the most delicious dessert the other night that I'm psyched to share with you all. Try this healthy, comfort food dessert- an awesome twist on the flavors of the season.

spicy organic pumpkin bread pudding
2 organic eggs
2/3 c organic sugar
2/4 t ginger
1/4 t nutmeg
1/4 t allspice
3/4 c canned organic pumpkin puree
1 can evaporated organic skim milk
1/2 c organic lowfat milk
3 c cinnamon raisin bread torn into cubes

Wisk eggs, sugar, spices in large bowl until blended. Add cinnamon raisin bread and mix with spoon. Cover and stick in the fridge for 40 min.

Preheat oven to 350. transfer pudding mixture into 8 inch square pan. Set the 8 in pan in a larger pan and add hot water to the larger pan until water comes up the sides of the 8 in. Bake for 45 min. test with a knife to see if it comes out clean after 45 min.

Remove pudding pan from water bath. Serve warm with vanilla ice cream or frozen yogurt. Yum... Enjoy the warm, delicious comforting flavors!
